How to Make Asparagus Brie Quiche
- Preheat oven to 200°C (400°F).
- Roll out one sheet of ready-made puff pastry (14.1 oz) and gently line a 9-inch round tart pan with a removable bottom. Trim and crimp the edges.
- Melt 1 tablespoon of butter in a small pan over medium heat. Add 2 chopped spring onions and sauté for 2-3 minutes until softened.
- While the onions cook, remove the rind from 8 ounces of brie cheese and cut it into small cubes.
- In a food processor, combine 3 large eggs, 1/2 cup heavy cream, 1/4 cup milk, the cubed brie, and a pinch of freshly grated nutmeg. Process until completely smooth.
- Season the cheese mixture generously with salt and freshly ground black pepper to taste.
- Evenly scatter the sautéed spring onions over the pastry base. Pour the cheese mixture over the onions. Arrange 1 bunch (approximately 10-12 spears) of asparagus spears in a spoke pattern on top of the cheese mixture.
- Bake for 25-30 minutes, or until the quiche is set, the crust is golden brown, and the filling is lightly puffed.
