How to Make Asparagus Brie Quiche

  1. Preheat oven to 200°C (400°F).
  2. Roll out one sheet of ready-made puff pastry (14.1 oz) and gently line a 9-inch round tart pan with a removable bottom. Trim and crimp the edges.
  3. Melt 1 tablespoon of butter in a small pan over medium heat. Add 2 chopped spring onions and sauté for 2-3 minutes until softened.
  4. While the onions cook, remove the rind from 8 ounces of brie cheese and cut it into small cubes.
  5. In a food processor, combine 3 large eggs, 1/2 cup heavy cream, 1/4 cup milk, the cubed brie, and a pinch of freshly grated nutmeg. Process until completely smooth.
