Ingredients for Asparagus Cigars

  • 1 pound asparagus, trimmed to 6-inch lengths
  • Flour Tortillas
  • 1 large egg
  • Pinch of salt
  • 2 tablespoons sesame seeds
  • Vegetable Oil
  • Soy Sauce
  • Fresh Lime Juice
  • Water
  • Sugar
  • Scallion

How to Make Asparagus Cigars

  1. Preheat your oven to 350°F (175°C). This will help keep the cigars warm while you fry them in batches.
  2. Trim asparagus spears to 6-inch lengths and set aside.
  3. In a small bowl, whisk together the egg and a pinch of salt.
  4. Cut the tortillas in half.
  5. Brush one half of each tortilla with a thin layer of the egg mixture.
  6. Place one asparagus spear along the cut side of the tortilla.
  7. Tightly roll up the tortilla around the asparagus.
  8. Insert a toothpick crosswise to secure the roll.
  9. Repeat steps 5-8 with the remaining asparagus and tortillas.
  10. Brush the outside of each roll with the remaining egg mixture and sprinkle generously with sesame seeds.
  11. Heat ½ inch of vegetable oil in a 10-inch heavy-duty skillet over medium-high heat. Use a thermometer to ensure the oil reaches 350°F (175°C).
  12. Carefully fry the rolls in batches of 3, turning once, until golden brown and crispy (approximately 3 minutes per batch). Maintain the oil temperature at 350°F (175°C) between batches.
  13. Remove the rolls from the skillet and place them on a wire rack or paper towels to drain excess oil.
  14. Prepare your dipping sauce (recipe needed).
  15. Serve the Asparagus Cigars immediately with your chosen dipping sauce. They're best enjoyed warm and crispy!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
