How to Make Asparagus Gratin Fancy And Good
- Preheat oven's broiler.
- Butter a 2- to 2 1/2-quart shallow ceramic flameproof baking dish.
- Bring a large pot of salted water to a boil. Add 1 pound asparagus spears and cook until crisp-tender, about 4 minutes.
- Drain asparagus in a colander and transfer to the prepared baking dish. Cover tightly with foil to keep warm.
- Meanwhile, in a 12-inch heavy skillet, heat 2 tablespoons olive oil and 2 tablespoons butter over high heat. Add 1/2 cup finely chopped shallots and cook until pale golden, about 3 minutes.
