- Preheat oven to 350°F (175°C).
- In a large oven-safe skillet (or baking dish) sprayed with non-stick cooking spray, brown 1.5 lbs boneless, skinless chicken breasts on all sides. Remove chicken and set aside.
- Prepare the au gratin potato mix according to package directions, but do not add any water yet. (Usually about 1 bag)
- Stir in 1/2 cup milk, 1 tablespoon Dijon mustard, and 1/4 cup chopped onion.

- Gently stir in the cooked chicken pieces, ensuring they are evenly distributed.
- Add the recommended amount of water according to the potato mix package instructions
- Roast, uncovered, for 45-55 minutes, or until the chicken is cooked through and the potatoes are tender.
- Sprinkle evenly with 1/2 cup breadcrumbs and 1/2 cup shredded cheddar cheese.
- Cook for another 5-10 minutes, or until breadcrumbs are golden brown and the cheese is melted and bubbly. Chicken juices should run clear when pierced with a fork.
