Ingredients for Australian Honeycomb
- 1/4 cup water
- Granulated Sugar
- 1/4 cup honey (preferably Australian for authentic flavor)
- Light Corn Syrup
- 1 teaspoon baking soda
How to Make Australian Honeycomb
- In a medium saucepan, combine sugar, corn syrup, and water. Stir over medium heat until the sugar dissolves.
- Increase the heat to medium-high and clip a candy thermometer to the side of the pan. Do not stir the mixture.
- Bring the mixture to a boil, and continue boiling until it reaches 300°F (149°C) - the hard-crack stage. This will take approximately 10-15 minutes. Watch carefully, as it can reach the hard-crack stage quickly.
- Remove the pan from the heat and carefully pour in the baking soda and honey. Stir vigorously with a heatproof spatula until the mixture becomes light and fluffy. This will happen quickly.
- Immediately pour the mixture into a buttered 9x13 inch baking pan. Let it cool completely.
- Once completely cool, break the honeycomb into pieces. For an extra delicious treat, melt semi-sweet chocolate chips (about 6 oz) in a microwave-safe bowl in 30-second intervals, stirring until smooth. Spread the melted chocolate evenly over the cooled honeycomb and let it set before breaking into pieces.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
