  • Granulated Sugar
  • 1/4 cup honey (preferably Australian for authentic flavor)

How to Make Australian Honeycomb

  1. In a medium saucepan, combine sugar, corn syrup, and water. Stir over medium heat until the sugar dissolves.
  2. Increase the heat to medium-high and clip a candy thermometer to the side of the pan. Do not stir the mixture.
  3. Bring the mixture to a boil, and continue boiling until it reaches 300°F (149°C) - the hard-crack stage. This will take approximately 10-15 minutes. Watch carefully, as it can reach the hard-crack stage quickly.
  4. Remove the pan from the heat and carefully pour in the baking soda and honey. Stir vigorously with a heatproof spatula until the mixture becomes light and fluffy. This will happen quickly.
  5. Immediately pour the mixture into a buttered 9x13 inch baking pan. Let it cool completely.
  6. Once completely cool, break the honeycomb into pieces. For an extra delicious treat, melt semi-sweet chocolate chips (about 6 oz) in a microwave-safe bowl in 30-second intervals, stirring until smooth. Spread the melted chocolate evenly over the cooled honeycomb and let it set before breaking into pieces.
