  1. Bring 4 quarts of water to a boil in a large pot.
  2. Chop 12 slices (approximately 12 ounces) of bacon into 1/2-inch bits.
  3. Place bacon bits in a large stainless steel skillet over medium heat.
  4. Cook slowly, rendering the fat until the bacon is crispy and browned (about 8-10 minutes).
  5. Remove the cooked bacon from the skillet using a slotted spoon; set aside.
  6. Roll up bunches of collard greens (about 1 pound) tightly, then slice crosswise into 1/4-inch ribbons.
  7. Add collard greens to the boiling water and blanch for 3 minutes until slightly wilted.
  8. Remove greens from boiling water using tongs; drain well and set aside.
