How to Make Bacon Filled Cherry Tomatoes
- Preheat oven to 375°F (190°C).
- In a medium bowl, combine 1/2 cup cooked bacon, crumbled; 1/4 cup crumbled goat cheese; 1 tablespoon chopped fresh chives; and 1/4 teaspoon salt and pepper.
- Cut a thin slice off the top of each cherry tomato (about 1 pint).
- Using a small spoon or melon baller, gently scoop out the seeds and pulp from each tomato, leaving a small shell.
- Fill each tomato cavity generously with the bacon mixture.
- Arrange the filled tomatoes on a baking sheet.
- Bake for 10-12 minutes, or until the tomatoes are slightly softened and the bacon is crispy.
