- 4 slices bacon
- 3 teaspoons butter
- 3 large eggs
- 1 cup milk
- Bacon Drippings
- 1 cup all-purpose flour
How to Make Bacon Popovers
- Preheat oven to 400°F (200°C).
- Cook 4 slices of bacon until crisp. Remove from pan and set aside to cool slightly.
- Drain bacon, reserving 1 tablespoon of bacon drippings.
- Grease six cups of a popover or muffin tin with 1/2 teaspoon of butter per cup.
- In a large bowl, whisk together 3 large eggs, 1 cup of milk, and 1 tablespoon of bacon drippings (or vegetable oil).
- Add 1 cup of all-purpose flour and the crumbled cooked bacon. Beat vigorously with a whisk or electric mixer until the batter is smooth and slightly frothy.
- Fill each prepared cup about halfway full.
- Bake for 35-40 minutes, or until the popovers are golden brown and firm to the touch.
- Remove from oven and immediately prick each popover with a fork to release steam.
- Serve immediately and enjoy!
