Ingredients for Bacon Popovers

  • 4 slices bacon
  • 3 teaspoons butter
  • 3 large eggs
  • 1 cup milk
  • Bacon Drippings
  • 1 cup all-purpose flour

How to Make Bacon Popovers

  1. Preheat oven to 400°F (200°C).
  2. Cook 4 slices of bacon until crisp. Remove from pan and set aside to cool slightly.
  3. Drain bacon, reserving 1 tablespoon of bacon drippings.
  4. Grease six cups of a popover or muffin tin with 1/2 teaspoon of butter per cup.
  5. In a large bowl, whisk together 3 large eggs, 1 cup of milk, and 1 tablespoon of bacon drippings (or vegetable oil).
  6. Add 1 cup of all-purpose flour and the crumbled cooked bacon. Beat vigorously with a whisk or electric mixer until the batter is smooth and slightly frothy.
  7. Fill each prepared cup about halfway full.
  8. Bake for 35-40 minutes, or until the popovers are golden brown and firm to the touch.
