- Apple
- 4 large eggs
- ½ cup granulated sugar
- Pinch of salt
- 2 cups whole milk
- 1 teaspoon vanilla extract
- Freshly grated nutmeg, to taste
How to Make Baked Apple Custard
- Melt 2 tablespoons of butter in a large skillet over medium-high heat.
- Add 2 cups of thinly sliced apples and sauté for 1 minute, stirring frequently.
- Reduce heat to medium-low, cover, and cook for 1 additional minute.
- Reduce heat to low, uncover, and cook apples until lightly browned and softened (about 5-7 minutes), stirring occasionally.
- Set aside to cool slightly.
- Preheat oven to 325°F (160°C).
- Butter 6 (6-ounce) custard cups.
- In a medium bowl, whisk 4 large eggs until thick and light.
- Gradually whisk in ½ cup granulated sugar and a pinch of salt until well combined.
- Slowly whisk in 2 cups whole milk and 1 teaspoon vanilla extract until smooth.
- Pour custard mixture evenly into the prepared custard cups.
- Place custard cups in a large, shallow baking pan.
- Carefully pour enough boiling water into the baking pan to come halfway up the sides of the custard cups.
- Bake for 50-60 minutes, or until a knife inserted into the center comes out clean.
- Carefully remove custard cups from the water bath and let cool to room temperature on a wire rack.
- Top each custard with 4 overlapping apple slices from the sautéed apples.
- Refrigerate for at least 2 hours, or preferably overnight, to allow flavors to meld and the custard to chill completely.
- Before serving, sprinkle generously with freshly grated nutmeg.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
