How to Make Baked Chicken Flavoured Rice With Meatballs
- Grease a large, oven-proof pot with 1 tablespoon of butter.
- Heat 1 tablespoon of butter in the pot over medium heat.
- Add 1 medium onion, chopped, and 2 cloves garlic, minced, and sauté for 4-5 minutes, until softened.
- Add 1 ½ cups Uncle Ben's Converted White Rice and stir for 1-2 minutes.
- Add 1 ½ cups chicken broth and 1 cup cooked, shredded chicken breast.
- Mix well with a wooden spoon and bring to a boil.
- Cover the pot with an oven-safe lid and simmer on the stovetop for 5 minutes, stirring occasionally.
- Preheat oven to 350°F (175°C).
- Place the covered pot in the preheated oven and bake for 33-35 minutes, or until the rice is tender.
- Remove from oven and stir in 1 cup cooked meatballs.
- Mix well and serve immediately. Add frozen peas (optional) during the last 5 minutes of baking.
- Serve with a fresh salad.
