- Quick Cooking Barley
- 1 medium onion, chopped
- 2 celery stalks, chopped
- 1/2 cup green bell pepper, chopped

How to Make Green Soup
- Rinse 1 cup of barley and add it to a pot with 4 cups of vegetable stock. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add 1 medium chopped onion, 2 chopped celery stalks, 1/2 cup chopped green bell pepper, and 2 cloves minced garlic. Cook for another 15 minutes, stirring occasionally.
- Add 2 medium diced potatoes and simmer until tender, about 15-20 minutes.
- Stir in 5 cups of your favorite chopped greens (spinach, kale, chard, etc.). If using 1 cup of artichoke hearts, add them now.
- Cook for 5-7 minutes, or until greens are wilted but still vibrant.
- Season generously with salt and pepper to taste. Add more vegetable stock if needed to reach your desired consistency.
