  • Quick Cooking Barley
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 1/2 cup green bell pepper, chopped
  • Garlic Cloves
  • 2 medium potatoes, diced
  • Spinach
  • Chicken Stock
  • Artichoke Hearts

How to Make Green Soup

  1. Rinse 1 cup of barley and add it to a pot with 4 cups of vegetable stock. Bring to a boil, then reduce heat and simmer for 15 minutes.
  2. Add 1 medium chopped onion, 2 chopped celery stalks, 1/2 cup chopped green bell pepper, and 2 cloves minced garlic. Cook for another 15 minutes, stirring occasionally.
  3. Add 2 medium diced potatoes and simmer until tender, about 15-20 minutes.
  4. Stir in 5 cups of your favorite chopped greens (spinach, kale, chard, etc.). If using 1 cup of artichoke hearts, add them now.
  5. Cook for 5-7 minutes, or until greens are wilted but still vibrant.
