  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine 1 tablespoon lemon juice, 1/4 teaspoon red pepper flakes, 1 clove minced garlic, and 1 (14.5 ounce) can of diced tomatoes, undrained.
  3. Lightly coat a small (8x8 inch) baking dish with cooking spray.
  4. Crumble 8 ounces of feta cheese into the prepared baking dish.
  5. Pour the tomato mixture evenly over the crumbled feta.
  6. Bake for 20-25 minutes, or until the feta is softened and slightly golden brown.
