How to Make Baked Rice With Sausage

  1. Cook 1 lb Italian sausage, 2 stalks celery (chopped), 1 medium onion (chopped), and 1 green bell pepper (chopped) in a large skillet over medium heat until sausage is browned and vegetables are tender. Drain off any excess grease.
  2. In a medium saucepan, bring 4 cups of water to a boil. Add 1 package (1 ounce) dry onion soup mix.
  3. Reduce heat to low and simmer for 5 minutes, or until the soup mix is dissolved.
  4. Stir in 1 (10.75 ounce) can condensed cream of mushroom soup, 2 cups cooked long-grain rice, and the sausage and vegetable mixture. Mix well to combine.
  5. Transfer the mixture to a greased 13x9x2 inch baking dish.
  6. In a small bowl, combine 1/2 cup bread crumbs and 2 tablespoons melted butter.
  7. Sprinkle the breadcrumb mixture evenly over the top of the rice casserole.
  8. Cover the baking dish with foil and bake at 350°F (175°C) for 40 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the rice is tender and the topping is golden brown.
  10. Let stand for 10 minutes before serving.
