  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • Cold Water
  • 2 tbsp butter, melted

How to Make Baked Smothered Chicken

  1. Preheat oven to 450°F (232°C).
  2. Season chicken pieces generously with salt, pepper, and minced garlic.
  3. Line a shallow baking pan with foil. Arrange chicken pieces in a single layer, skin-side down.
  4. Drizzle melted butter evenly over the chicken.
  5. Cover the baking pan tightly with foil.
  6. Bake for 15-20 minutes, or until the chicken is lightly browned.
  7. While the chicken is baking, whisk together 1/2 cup of water and 2 tablespoons of flour in a small bowl until completely smooth and lump-free.
  8. Remove the chicken from the oven.
  9. Carefully tilt the baking pan and pour the water/flour mixture into the pan drippings.
  10. Stir gently to combine and begin thickening the gravy.
  11. Turn the chicken pieces over, ensuring they are coated in the gravy. Season with additional salt and pepper to taste.
  12. Reduce oven temperature to 350°F (177°C).
  13. Return the pan to the oven and bake for 45-60 minutes, or until the chicken is cooked through and the gravy is thickened to your liking. Baste once or twice during baking, adding a little boiling water if the gravy becomes too thick before the chicken is fully cooked.
