  2. Carefully split the 1.5 lb lobster lengthwise. If live, humanely euthanize first.
  3. Remove the dark intestinal vein running along the back.
  4. Gently remove the coral and tomalley (lobster liver) and place in a medium bowl.
  5. To the coral and tomalley, add 1/4 cup breadcrumbs, 2 tablespoons melted butter, 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1 teaspoon fresh tarragon, chopped.
  6. Fill the lobster cavities generously with the breadcrumb mixture. Drizzle lightly with 1 teaspoon vegetable oil.
