How to Make Baked Stuffed Lobster For Two
- Preheat oven to 450°F (232°C).
- Carefully split the 1.5 lb lobster lengthwise. If live, humanely euthanize first.
- Remove the dark intestinal vein running along the back.
- Gently remove the coral and tomalley (lobster liver) and place in a medium bowl.
- To the coral and tomalley, add 1/4 cup breadcrumbs, 2 tablespoons melted butter, 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1 teaspoon fresh tarragon, chopped.
- Fill the lobster cavities generously with the breadcrumb mixture. Drizzle lightly with 1 teaspoon vegetable oil.
- Bake for 25-30 minutes, or until the lobster is cooked through and the breadcrumb topping is golden brown and slightly crisp.
