Ingredients for Balsamic Vinegar Chicken Noodles

  • Chicken Breasts
  • 1/4 cup balsamic vinegar
  • Red Wine
  • Cherry Tomatoes
  • Garlic Cloves
  • 1/4 cup olive oil
  • Angel Hair Pasta
  • Fresh Mozzarella Cheese

How to Make Balsamic Vinegar Chicken Noodles

  1. Marinate 1.5 lbs boneless, skinless chicken breasts in 1/2 cup dry red wine, 1/4 cup olive oil, and 1/4 cup balsamic vinegar for 20-30 minutes.
  2. Add 4 cloves of minced garlic to the chicken and marinade.
  3. Bring the chicken mixture to a boil in a large pot or Dutch oven, then reduce heat and simmer for 10 minutes.
  4. Cover and let the chicken rest for another 20 minutes. Prepare any side dishes during this time.
  5. Break angel hair pasta into halves or thirds.
  6. Bring the chicken mixture back to a gentle boil.
  7. Add 8 oz angel hair pasta and 1 cup cherry tomatoes to the pot.
  8. Cook pasta according to package directions, but do not drain. The pasta starch will thicken the sauce.
  9. Serve immediately. Garnish with 1/2 cup small mozzarella balls and fresh basil (optional).

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
