How to Make Barbecued Prawns With Chilli Lime Cilantro Butter
- **Make the Chilli Lime Cilantro Butter:** Combine 2 cloves garlic, 1/4 cup chopped fresh cilantro, 1-2 red chilies (finely chopped, adjust to your spice preference), and 2 tablespoons lime juice in a food processor. Pulse until finely chopped but not pureed.
- **Marinate the Prawns:** Remove 1 tablespoon of the cilantro mixture. Gently toss 1 pound of shell-on prawns with this mixture and set aside in the refrigerator for at least 30 minutes.
- **Finish the Butter:** Add 1/2 cup (1 stick) unsalted butter and a pinch of salt and pepper to the food processor with the remaining cilantro mixture. Pulse until smooth and creamy.
- **Chill the Butter:** Scrape the butter onto a sheet of foil, shape it into a log, and freeze for at least 30 minutes to firm up.
