- Fresh Green Beans
- Cherry Tomatoes
- 1/4 cup toasted pine nuts
- Red Onion
- Fresh Basil
- 1/4 cup balsamic vinegar
- Olive Oil
- Garlic Cloves
- 1 teaspoon Dijon mustard
- 1 teaspoon sugar
How to Make Basil And Balsamic Green Bean Salad
- Bring a large pot of salted water to a boil. Add 1 pound of green beans and blanch for 1-2 minutes until bright green and slightly tender.
- Immediately transfer green beans to a bowl of ice water to stop the cooking process.
- Once cooled, drain the green beans and pat them dry with a clean kitchen towel.
- While the beans cool, prepare the remaining ingredients. Combine 1/2 cup chopped fresh basil, 1/2 cup crumbled feta cheese, 1/4 cup toasted pine nuts (reserve 1 tablespoon for garnish), and the drained green beans in a large bowl.
- In a small bowl, whisk together 1/4 cup balsamic vinegar, 1/4 cup extra virgin olive oil, 1 clove minced garlic, 1 teaspoon Dijon mustard, and 1 teaspoon sugar until emulsified.
- Pour the dressing over the green bean mixture and gently toss to combine.
- Cover and refrigerate for at least 30 minutes, or up to 1 hour, to allow the flavors to meld. (For best results, marinate for longer!)
- Before serving, garnish with the reserved 1 tablespoon of toasted pine nuts.
Chef's Tip for Extra Flavor
Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
