Ingredients for Basil And Balsamic Green Bean Salad

  • Fresh Green Beans
  • Cherry Tomatoes
  • 1/4 cup toasted pine nuts
  • Red Onion
  • Fresh Basil
  • 1/4 cup balsamic vinegar
  • Olive Oil
  • Garlic Cloves
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar

How to Make Basil And Balsamic Green Bean Salad

  1. Bring a large pot of salted water to a boil. Add 1 pound of green beans and blanch for 1-2 minutes until bright green and slightly tender.
  2. Immediately transfer green beans to a bowl of ice water to stop the cooking process.
  3. Once cooled, drain the green beans and pat them dry with a clean kitchen towel.
  4. While the beans cool, prepare the remaining ingredients. Combine 1/2 cup chopped fresh basil, 1/2 cup crumbled feta cheese, 1/4 cup toasted pine nuts (reserve 1 tablespoon for garnish), and the drained green beans in a large bowl.
  5. In a small bowl, whisk together 1/4 cup balsamic vinegar, 1/4 cup extra virgin olive oil, 1 clove minced garlic, 1 teaspoon Dijon mustard, and 1 teaspoon sugar until emulsified.
  6. Pour the dressing over the green bean mixture and gently toss to combine.
  7. Cover and refrigerate for at least 30 minutes, or up to 1 hour, to allow the flavors to meld. (For best results, marinate for longer!)
  8. Before serving, garnish with the reserved 1 tablespoon of toasted pine nuts.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
