  • 3 tablespoons peanut oil
  • Unsalted Dry Roasted Cashews
  • 1/2 medium onion, thinly sliced
  • Red Chili Pepper
  • Garlic Cloves
  • Fresh Basil Leaf
  • Chicken Fillets
  • 1 tablespoon palm sugar (or to taste)
  • 1/4 teaspoon salt
  • Limes, Juice Of
  • 1 tablespoon fish sauce

How to Make Basil Chicken And Cashew Nuts

  1. Heat 2 tablespoons peanut oil in a pre-heated wok or large skillet over medium-high heat.
  2. Add 1 cup cashew nuts and fry until light golden brown, about 3-4 minutes.
  3. Remove cashews and set aside on paper towels to drain.
  4. Add 1 tablespoon peanut oil to the wok.
  5. Add 1/2 medium onion (thinly sliced), 1-2 red chilies (finely chopped), and 2 cloves garlic (minced) and stir-fry until lightly browned, about 2-3 minutes.
  6. Add 3/4 cup fresh basil leaves and stir-fry until fragrant, about 1 minute.
  7. Add 1 lb boneless, skinless chicken breast (cut into thin slices) and stir-fry for 2 minutes, until the chicken is cooked through and lightly browned.
  8. Stir in the reserved cashews and the remaining 1/4 cup fresh basil leaves.
  9. Add 1 tablespoon palm sugar (or to taste), the juice of 1/2 lime (or lemon), 1/4 teaspoon salt, and 1 tablespoon fish sauce. Stir to combine.
