How to Make Bbq And Cheddar Foil Chicken Dinner
- Preheat oven to 375°F (190°C).
- Prepare four 12x12 inch sheets of heavy-duty aluminum foil.
- Divide the following ingredients evenly among the four foil sheets: 1 tablespoon BBQ sauce per packet, 1 boneless, skinless chicken breast half (about 6 ounces) per packet, 1/4 medium russet potato (about 1/2 cup cubed), 1/4 cup chopped bell pepper (any color), 1/4 cup chopped onion, salt and pepper to taste.
- Place chicken breast half in the center of each foil sheet. Top with 1 tablespoon of BBQ sauce.
- Add the potato, bell pepper, and onion on top of the chicken.
- Season with salt and pepper.
- Fold foil in half over the ingredients, creating a sealed packet. Crimp edges tightly to prevent leakage.
- Place packets on a baking sheet.
- Bake for 35 minutes.
- Remove from oven. Carefully open each foil packet using scissors, being cautious of steam.
- Sprinkle 1/4 cup shredded cheddar cheese over each chicken breast.
- Return packets to the oven (unsealed) for 2-3 minutes, or until cheese is melted and bubbly.
