How to Make Bbq Ranch Quesadilla Wedges
- Heat olive oil in a skillet over medium heat. Add chopped bell pepper and onion; sauté for 5-7 minutes, or until softened.
- In a small bowl, combine barbecue sauce and ranch dressing. Mix well.
- Spread 1 tablespoon of softened butter evenly on one side of each tortilla.
- Layer approximately 1/2 cup of barbecue beef, the pepper and onion mixture, and 1/2 cup of shredded cheese evenly onto the non-buttered side of each tortilla.
- Top with remaining tortillas, buttered side up.
