How to Make Bean Cheese Casserole

  1. Preheat oven to 400°F (200°C).
  2. Peel and slice 2 lbs potatoes. Boil in a large pot of salted water until tender (about 15-20 minutes), easily pierced with a fork.
  3. While potatoes boil, prepare the bean mixture: In a medium bowl, combine 1 (15-ounce) can cannellini beans (drained and rinsed), 1 (14.5-ounce) can diced tomatoes (undrained), 1/2 cup chopped onion, 1/2 cup chopped green bell pepper, and 1/4 cup nutritional yeast (for cheesy flavor).
  4. Drain the cooked potatoes and set aside.
  5. Lightly grease a 9x13 inch casserole dish.
  6. Layer half of the potatoes in the dish.
  7. Top with half of the bean mixture, then sprinkle with half of 1 cup vegan cheddar shreds.
