How to Make Beefy Tortilla Casserole

  1. Brown 1 lb ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Add 1 packet taco seasoning and stir according to package directions.
  3. Add 1 medium onion, chopped, and 1 green bell pepper, chopped, to the skillet. Cook until softened and translucent, about 5-7 minutes.

  5. In a greased 9x13 inch baking dish, layer 6-8 corn or flour tortillas, half of the ground beef mixture, half of the cheese (1.5 cups shredded cheddar cheese, or your preferred blend), and half of the soup mixture.
  6. Repeat layers: tortillas, remaining ground beef, remaining cheese, and remaining soup mixture.
  7. Top with remaining soup mixture and sprinkle with extra cheese.
  8. Bake at 350°F (175°C) for 35-40 minutes, or until bubbly and heated through.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
