How to Make Beefy Tortilla Casserole
- Brown 1 lb ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Add 1 packet taco seasoning and stir according to package directions.
- Add 1 medium onion, chopped, and 1 green bell pepper, chopped, to the skillet. Cook until softened and translucent, about 5-7 minutes.
- In a large bowl, whisk together 10.75 oz can condensed cream of chicken soup, 10.75 oz can condensed nacho cheese soup, 1/2 cup milk, and 1/2 cup salsa.
- In a greased 9x13 inch baking dish, layer 6-8 corn or flour tortillas, half of the ground beef mixture, half of the cheese (1.5 cups shredded cheddar cheese, or your preferred blend), and half of the soup mixture.
- Repeat layers: tortillas, remaining ground beef, remaining cheese, and remaining soup mixture.
- Top with remaining soup mixture and sprinkle with extra cheese.
- Bake at 350°F (175°C) for 35-40 minutes, or until bubbly and heated through.
