How to Make Blueberry Oat Summer Treat

  1. In a medium saucepan, whisk together 1/2 cup water and 1/4 cup cornstarch over medium heat.
  2. Gradually whisk in 1 cup of sugar until completely smooth.
  3. Bring the mixture to a boil, stirring constantly, until it thickens.
  4. Gently stir in 2 cups fresh or frozen blueberries.
  5. Continue to cook and stir for 2-3 minutes, or until the blueberry mixture is thick and bubbly.
  6. Remove from heat and set aside to cool slightly.
  7. In a large bowl, combine 1 box (15.25 oz) yellow cake mix and 1 cup rolled oats.
  8. Cut in 6 tablespoons (3 ounces) cold unsalted butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  9. Set aside 1 cup of the crumb mixture for the topping.
  10. Stir in 2 large egg whites into the remaining crumb mixture until just combined.
  11. Lightly grease a 9x13 inch baking dish with nonstick cooking spray.
  12. Press the crumb mixture into the bottom of the prepared baking dish.
  13. Spread the cooled blueberry mixture evenly over the oat crust.
  14. In a separate bowl, combine the reserved 1 cup crumb mixture with 1/2 cup rolled oats and 1/4 cup packed light brown sugar.
  15. Cut in 4 tablespoons (2 ounces) cold unsalted butter until crumbly.
  16. Sprinkle the crumble topping evenly over the blueberry layer.
  17. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  18. Let cool slightly before serving. Enjoy warm with a scoop of frozen yogurt or lowfat ice cream (optional).
