How to Make Brunch In A Bun

  1. Preheat oven to 375°F (190°C).
  2. Slice the buns horizontally and spread the bottom half thinly with 1 teaspoon of butter or margarine. Spread the top half with 1/2 teaspoon of English mustard.
  3. In a pan over medium heat, fry 2 sausages and 2 rashers of bacon until cooked through and crispy. Remove from pan and set aside.
  4. In the same pan, add 5 cherry tomatoes, halved. Cook for 2-3 minutes, until slightly softened. Alternatively, broil or grill for 3-5 minutes.
  5. Fry 2 eggs to your liking in the pan.
  6. Drain any excess grease from the pan.
  7. Arrange the cooked sausages, bacon, and cherry tomatoes on the bottom bun half.
  8. Top with the fried egg.
  9. Place the top bun half on top.
  10. Season generously with freshly ground black pepper.
  11. Serve immediately with apple juice, coffee, and a bran muffin (optional).
