Ingredients for Can T Fail Holiday Fruitcake

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 4 large eggs
  • 2 cups mincemeat
  • 1 (14-ounce) can sweetened condensed milk
  • Walnuts
  • Mixed Candied Fruit
  • Maraschino Cherry

How to Make Can T Fail Holiday Fruitcake

  1. Preheat oven to 300°F (150°C). Grease and flour a 9-inch springform pan.
  2. Line the bottom of the pan with parchment paper. Grease and flour the parchment as well.
  3. In a large bowl, whisk together 2 cups all-purpose flour and 1 teaspoon baking soda.
  4. In a separate bowl, combine 4 large eggs, 2 cups mincemeat, 1 (14-ounce) can sweetened condensed milk, 1 cup chopped walnuts, and 1 cup candied fruit (mixed peel).
  5. Gradually add the dry ingredients to the wet ingredients, gently folding until just combined. Do not overmix.
  6. Pour batter into the prepared springform pan.
  7. Bake for 2-2.5 hours, or until a wooden skewer inserted into the center comes out clean and the top is golden brown.
  8. Let the fruitcake cool in the pan for at least 30 minutes before removing the sides of the springform pan.
  9. Carefully remove the fruitcake from the pan and peel away the parchment paper.
  10. Let cool completely on a wire rack.
  11. Wrap tightly in plastic wrap and refrigerate for at least 24 hours (longer is better!) before slicing and serving. This allows the flavors to meld.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
