How to Make Caramel Cookie Bars

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine 1 ½ cups all-purpose flour, ½ cup packed brown sugar, ½ teaspoon salt, ½ cup (1 stick) cold unsalted butter, cut into cubes. Mix with a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press half of the crust mixture into the bottom of a greased 9x13 inch baking pan.
  4. Bake for 10 minutes.
  5. While the crust bakes, in a medium saucepan over low heat, melt 14 oz caramels with ¼ cup heavy cream, stirring until smooth.
  6. Pour the melted caramel evenly over the baked crust.
  7. Sprinkle 6 oz semi-sweet chocolate chips over the caramel layer.
  8. Crumble the remaining crust mixture evenly over the chocolate chips.
  9. Bake for an additional 10-15 minutes, or until the top is lightly golden brown. Do not overbake!
  10. Let cool completely before cutting into bars.
