How to Make Cheese Stuffed Manicotti In Meat Sauce

  1. Preheat oven to 350°F (175°C).
  2. Bring 4 quarts of water to a rolling boil in a large pot. Add salt if desired.
  3. Add manicotti noodles and cook for 9-11 minutes, or until al dente. Check for doneness according to package directions.
  4. Drain noodles and rinse under cold water to prevent sticking. Set aside.
  5. While noodles cook, brown 1 pound of ground beef in a large skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  6. Stir in 24 ounces of your favorite jarred spaghetti sauce. Bring to a simmer, then reduce heat and cook for 5 minutes.
  7. In a medium bowl, combine 2 large eggs, 1 cup of shredded mozzarella cheese, 1/2 of the ricotta cheese (approximately 7.5 ounces), 1/2 cup of Parmesan cheese, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix well.
  8. Pour half of the meat sauce into the bottom of a 9x13 inch baking dish.
  9. Fill each manicotti noodle with the cheese mixture using a spoon or piping bag. Arrange filled noodles over the meat sauce in the baking dish.
  10. Spread the remaining ricotta cheese evenly over the manicotti. Top with the remaining meat sauce and the remaining 1 cup of mozzarella cheese.
  11. Bake, covered with foil, for 40 minutes. Remove foil and bake for an additional 5-10 minutes, or until heated through and cheese is melted and bubbly.
  12. Let stand for 10 minutes before serving. Enjoy!
