How to Make Circle Around Sausage Minestrone Ragu

  1. Heat 2 teaspoons olive oil in a large, deep skillet over medium heat.
  2. Add 1 pound Italian sausage and cook, covered, for 10 minutes, shaking the pan occasionally to brown evenly.
  3. Remove sausage from skillet and slice into 1/4-inch thick rounds.
  4. Add 1 cup chopped carrots, 1 cup chopped celery, 1/2 cup chopped shallots, and 2 medium potatoes (about 1 pound), diced, to the skillet.
  5. Season lightly with 1/2 teaspoon salt and cook, stirring occasionally, for 2 minutes.
  6. Return sausage rounds to the skillet.
  7. Pour in 24 ounces Ragú® sauce. Empty the jar, rinse with 1 cup water, and add the water to the skillet.
  8. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 12-13 minutes, or until potatoes are tender.
  9. Stir in 1 (15-ounce) can garbanzo beans, drained and rinsed, and cook for an additional 5 minutes, or until heated through.
  10. Meanwhile, prepare the arugula pesto: In a small food processor, combine 1 cup packed arugula, 1/4 cup pine nuts, 1/4 teaspoon salt, and 1/4 teaspoon garlic powder.
  11. Pulse until combined. With the food processor running, slowly add 1/4 cup olive oil until smooth.
  12. To serve, spoon the soup into bowls. Top each serving with a generous dollop of arugula pesto and serve immediately. Enjoy!
  13. (Optional) Save the empty Ragú jar to store leftover soup!
