How to Make Classic Cottage Pie
- Preheat your oven to 375°F (190°C).
- In a large skillet, brown 1.5 lbs of ground beef over medium-high heat. Drain off any excess grease.
- Add 1 large chopped onion and 2 carrots (chopped) to the skillet and cook until softened, about 5 minutes.
- Stir in 2 cloves minced garlic, 1 tbsp tomato paste, 1 tsp dried thyme, 1 tsp dried rosemary, salt and pepper to taste.
- Pour in 1 cup of beef broth and bring to a simmer. Reduce heat and cook for 10 minutes, allowing the sauce to thicken slightly.
- In a separate bowl, mash 2 lbs of potatoes with 1/2 cup of milk, 2 tbsp butter, and salt and pepper to taste until smooth and creamy.
- Pour the beef mixture into a 9x13 inch baking dish.
- Spread the mashed potatoes evenly over the top of the beef mixture.
- Bake for 25-30 minutes, or until the potatoes are golden brown and the filling is bubbly.
- Let stand for 10 minutes before serving.
