How to Make Classic Cottage Pie

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown 1.5 lbs of ground beef over medium-high heat. Drain off any excess grease.
  3. Add 1 large chopped onion and 2 carrots (chopped) to the skillet and cook until softened, about 5 minutes.
  4. Stir in 2 cloves minced garlic, 1 tbsp tomato paste, 1 tsp dried thyme, 1 tsp dried rosemary, salt and pepper to taste.
  5. Pour in 1 cup of beef broth and bring to a simmer. Reduce heat and cook for 10 minutes, allowing the sauce to thicken slightly.
  6. In a separate bowl, mash 2 lbs of potatoes with 1/2 cup of milk, 2 tbsp butter, and salt and pepper to taste until smooth and creamy.
  7. Pour the beef mixture into a 9x13 inch baking dish.
  8. Spread the mashed potatoes evenly over the top of the beef mixture.
  9. Bake for 25-30 minutes, or until the potatoes are golden brown and the filling is bubbly.
  10. Let stand for 10 minutes before serving.
