How to Make Barbecue Basil Meatloaf With Mashed Potato Top
- Preheat oven to 375°F (190°C).
- Spray an 8x4 inch loaf pan with cooking spray.

- Gently mix until just combined. Do not overmix.
- Pat the meatloaf mixture into the prepared loaf pan.
- Bake for 30 minutes.
- Remove from oven and spread the mashed potato mixture evenly over the top of the meatloaf.
- Sprinkle with 1/4 cup grated Parmesan cheese and drizzle with an additional 2 tablespoons of barbecue sauce.
