How to Make Company Scrambled Eggs
- Combine 4 ounces cream cheese, 2 ounces goat cheese, and 1 large egg in a food processor or blender. Blend until smooth.
- Add another large egg and blend again until fully incorporated.
- Transfer the mixture to a medium mixing bowl. Whisk in the remaining 6 large eggs.
- Whisk in 2 tablespoons mayonnaise, 1/4 teaspoon cayenne pepper, 1/4 teaspoon nutmeg, 2 tablespoons chopped fresh basil, and 2 tablespoons chopped fresh chives.
- Warm a 10-inch nonstick skillet over medium heat.
- Lightly spray the pan with cooking spray. Add 1 tablespoon butter. Tilt the pan to coat.
- Add 1/4 cup finely chopped shallots and 1/2 teaspoon salt. Sauté briefly until softened.
- Pour the egg mixture into the skillet. Let stand undisturbed over medium heat for 30 seconds.
- Remove the pan from the heat. Let stand for 1 minute. Gently scrape the cooked curds from the sides and bottom of the pan.
- Return the pan to medium heat. Cook for another minute, then repeat the standing and scraping process.
- Continue steps 9 and 10 until the eggs are almost set but still slightly moist. They will continue to cook off the heat.
- Spoon the scrambled eggs onto a warmed plate. Garnish with fresh basil and serve immediately with hearty toast.
