How to Make Company Scrambled Eggs

  1. Combine 4 ounces cream cheese, 2 ounces goat cheese, and 1 large egg in a food processor or blender. Blend until smooth.
  2. Add another large egg and blend again until fully incorporated.
  3. Transfer the mixture to a medium mixing bowl. Whisk in the remaining 6 large eggs.
  4. Whisk in 2 tablespoons mayonnaise, 1/4 teaspoon cayenne pepper, 1/4 teaspoon nutmeg, 2 tablespoons chopped fresh basil, and 2 tablespoons chopped fresh chives.
  5. Warm a 10-inch nonstick skillet over medium heat.
  6. Lightly spray the pan with cooking spray. Add 1 tablespoon butter. Tilt the pan to coat.
  7. Add 1/4 cup finely chopped shallots and 1/2 teaspoon salt. Sauté briefly until softened.
