How to Make Cowboy Bob Beans

  1. Preheat oven to 350°F (175°C).
  2. In a large oven-safe pot or Dutch oven, combine 1 (15-ounce) can of kidney beans (drained and rinsed), 1 (15-ounce) can of pinto beans (drained and rinsed), and 1 cup of beef broth.
  3. In a separate skillet, sauté 1 medium onion (chopped), 1 green bell pepper (chopped), and 2 cloves garlic (minced) in 2 tablespoons of butter until softened. Add 8 frankfurters (sliced) and cook for another 3-5 minutes, until lightly browned.
  4. Add the sautéed vegetables and frankfurters to the bean mixture.
  5. Stir in 1 (20-ounce) can of pineapple chunks (drained), reserving ½ cup of the pineapple juice. Add the reserved pineapple juice to the pot.
  6. Season generously with salt and pepper to taste. You may also add other spices like cumin or chili powder for extra flavor.
  7. Bake uncovered for 30 minutes, or until heated through and bubbly.
