How to Make Curried Lamb Loaf
- Preheat oven to 400°F (200°C).
- In a large bowl, gently combine 1 lb ground lamb, 1 medium onion (finely chopped), 2 cloves garlic (minced), 2 large eggs, 2 tbsp curry powder, 1/2 tsp cayenne pepper (or more, to taste), 1 tsp salt, and 1 cup breadcrumbs.
- Shape the lamb mixture into a loaf and place it in a greased 9x12 inch baking dish.
- In a separate bowl, whisk together 1 (14.5 ounce) can diced tomatoes (undrained), 1 tbsp Worcestershire sauce, 1/2 tsp cayenne pepper, 1 tbsp soy sauce, and 2 tbsp brown sugar.
- Pour the tomato mixture evenly over the lamb loaf.
- Bake for 45-60 minutes, or until the lamb is cooked through and the glaze is bubbly. Internal temperature should reach 160°F (71°C).
- Let rest for 10 minutes before slicing and serving with chutney and cooked basmati rice.
