How to Make Danish Roast Beef

  1. Rub roast with garlic
  2. Press pepper and salt into surface
  3. Place meat on center of buttered foil
  4. Wrap roast
  5. Place on rack in roasting pan
  6. Roast in preheated 375f over for 45 minutes for rare or 1 hour for medium rare
  7. Remove foil
  8. Pour meat drippings into a small saucepan
  9. Replace roast on rack
  10. Roast for 10 to 15 minutes at 400f
  11. Boil drippings until reduced to a shiny glaze
  12. Pour glaze over roast before serving
  13. Let roast stand for 20 minutes for easier slicing
  14. We prefer ours medium - medium well so i cook ours a lot longer
  15. I also then make a slurry of flour, water, salt and pepper and add to the drippings to make a gravy
