How to Make Devil's Food Bunny Cake

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together 2 cups all-purpose flour, 2 teaspoons baking soda, 1 teaspoon salt, and 1 ¾ cups granulated sugar.
  3. Add 1 cup (2 sticks) softened unsalted butter to the dry ingredients.
  4. Beat with an electric mixer on medium speed for 2 minutes.
  5. In a separate bowl, whisk together 1 teaspoon vanilla extract, 2 large eggs, 1 cup unsweetened cocoa powder, and ¼ cup milk.
  6. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  7. Pour batter evenly into the prepared cake pans.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let cakes cool in pans for 10 minutes before inverting onto wire racks to cool completely.
  10. Once cooled, carefully level the tops of the cakes with a serrated knife.
  11. Cut one cake layer in half to create a bow tie shape and two ear shapes.
  12. Frost the entire cake with your favorite frosting.
  13. Tint ¼ cup sweetened shredded coconut red with food coloring.
  14. Sprinkle the red coconut onto the center of the ears.
  15. Use gumdrops for the nose, eyes, and polka dots on the bow tie. Use red licorice strips for the mouth and whiskers.
  16. Optionally, tint additional coconut green and sprinkle around the base of the bunny.
