How to Make Espresso Buzz Energy Bars

  1. Preheat oven to 350°F (175°C) and lightly grease an 8x8-inch square baking pan.
  2. In a food processor, combine 1 cup rolled oats and all of the flaxseed meal. Pulse until coarsely ground.
  3. In a large bowl, combine the oat and flax mixture with the remaining 1 cup rolled oats, salt, and chocolate chips. Mix well.
  4. In a separate bowl, whisk together the melted vegan margarine, brown rice syrup, brown sugar, brewed coffee, and instant espresso powder until the sugar and instant coffee are fully dissolved.
  5. Pour the wet ingredients into the dry ingredients and stir until evenly combined. The mixture will be thick.
  6. Pour the mixture into the prepared baking pan and use a spatula to spread it evenly.
  7. Bake for 15-20 minutes, or until the edges are lightly golden brown and the center is set. A toothpick inserted into the center should come out with a few moist crumbs attached.
  8. Let the bars cool completely in the pan before lifting them out and slicing into bars. Store in an airtight container at room temperature for up to a week.
