How to Make Favourite Relish

  1. Coarsely chop 6 cups of mixed vegetables (onions, peppers, etc.) using a food processor in pulse mode. Alternatively, chop by hand.
  2. In a large bowl, combine the chopped vegetables with 1/4 cup of kosher salt. Cover with boiling water, ensuring the vegetables are fully submerged.
  3. Let the vegetables stand for 3 hours to draw out excess moisture.
  4. Drain the vegetables thoroughly and rinse under cold water to remove excess salt.
  5. To make the pickling liquid, combine the following in a large stockpot: 4 cups white vinegar, 2 cups sugar, 1/2 cup yellow mustard seeds, 2 tablespoons celery seed, 1 tablespoon turmeric, and 1 teaspoon black peppercorns. Bring to a boil.
  6. Add the drained vegetables to the boiling pickling liquid. Return the mixture to a boil, then reduce heat to low and simmer for 20 minutes, stirring occasionally.
  7. While the relish simmers, sterilize 12 half-pint jars. Using a canning funnel or ladle, carefully fill the hot jars with the relish, leaving 1/4 inch headspace.
  8. Remove air bubbles by running a non-metallic utensil around the inside of the jar.
  9. Wipe the jar rims clean. Place lids and rings on jars and tighten fingertip tight.
  10. Process in a boiling water bath for 10 minutes (adjust according to your altitude).
  11. Remove jars from the canner and let them cool completely. Check for seals. Any unsealed jars should be refrigerated and consumed within 2 weeks.
