How to Make Heavenly Jam
- Grind 1 kg of unpeeled oranges and 500g of unpeeled lemons in a food processor until finely ground.
- Transfer the ground citrus mixture to a large, heavy-bottomed kettle or pot.
- Stir in 1 teaspoon of baking soda.
- Bring the mixture to a simmer over medium heat and cook for 10 minutes, stirring occasionally.
- While the mixture simmers, peel, core, and segment the remaining 1 kg of citrus fruit (oranges, lemons, grapefruits – use your favorite combination).
- Grind the peeled and segmented fruit in a food processor until finely ground. You may need to do this in batches.

- While the jam is boiling, prepare your canning jars by sterilizing them in boiling water for 10 minutes. Keep them hot.
- Carefully ladle the hot jam into the sterilized jars, leaving ¼-inch headspace at the top.
- Wipe the rims of the jars clean and place the lids and rings on securely.
- Process the filled jars in a boiling water bath for 20 minutes to ensure proper sealing. Ensure jars are fully submerged during processing.
