Ingredients for Herb Garlic Marinated Feta

  • 8 ounces feta cheese
  • Dried Herbs
  • Garlic Clove
  • Lemon Juice
  • Whole Grain Mustard
  • Basil Pesto
  • Cracked Black Pepper
  • Light Olive Oil

How to Make Herb Garlic Marinated Feta

  1. In a jar with a tight-fitting lid, combine 1/2 cup light olive oil, 2 cloves minced garlic, 1 tablespoon dried oregano, 1 tablespoon dried basil, 1 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Cut 8 ounces of feta cheese into approximately 2cm cubes.
  3. Gently add the feta cubes to the jar, a few at a time, swirling the oil to coat each addition.
  4. Once the jar is full (or nearly full), seal the lid tightly and invert the jar several times to thoroughly coat the cheese. Add more olive oil if necessary to ensure all cheese is submerged.
  5. Invert the jar a few more times and refrigerate for at least 24 hours to allow the flavors to meld.
  6. The olive oil will solidify when refrigerated. This is normal!
  7. Serve at room temperature with crusty bread, crackers, or use in salads. The marinated oil is fantastic in dressings!
  8. Store in the refrigerator for up to 2 months.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
