How to Make Herb Roasted Cornish Game Hens

  1. Preheat oven to 350°F (175°C). Line a large roasting pan with foil.
  2. In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon dried herbs (Italian mix recommended), 1 teaspoon salt, and 1/2 teaspoon black pepper.
  3. Reserve 2 tablespoons of the herb mixture.
  4. Generously rub the remaining herb mixture inside and out of each Cornish hen.
  5. Stuff each hen with 1 sprig of fresh rosemary, 1 sprig of fresh thyme, and a 1/2 slice of lemon.
  6. In a large bowl, toss together 1 pound baby carrots, 1 pound small red potatoes (halved), 1 medium onion (quartered), and the reserved 2 tablespoons of herb mixture. Season generously with salt and pepper.
  7. Arrange the vegetables in the prepared roasting pan. Place the hens on top of the vegetables.
  8. Roast for 50-55 minutes, or until the juices run clear and a meat thermometer inserted into the thickest part of the thigh registers 180°F (82°C).
  9. Remove from oven, tent with foil, and let rest for 10 minutes before serving.
  10. Serve with a fresh green salad and red wine vinaigrette.
