How to Make Honey Baked Apples

  1. Combine 1/2 cup apricot pieces, 1/4 cup dry wine, and 2 tablespoons granulated sugar in a small saucepan.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. Stir in 1/4 cup raisins and continue to simmer for 5 minutes.
  4. Remove from heat and stir in 1 tablespoon butter until melted.
  5. Stir in the zest of 1 lemon and 1/4 cup chopped cashews. Let cool completely.
  6. Preheat oven to 350°F (175°C).
  7. Peel, core, and halve 6 apples lengthwise. Cut an indentation down the length of each half.
  8. As you peel and core each apple, rub with reserved lemon juice to prevent browning.
  9. Arrange apple halves, rounded side down, in a glass baking dish.
  10. Evenly distribute the cooled apricot filling among the apple halves, mounding slightly in the center.
  11. In a small saucepan, combine 1/2 cup honey, 2 tablespoons water, and the remaining lemon juice.
  12. Bring to a boil and boil rapidly for 5 minutes, or until slightly thickened. Watch carefully to prevent boiling over.
  13. Remove from heat and spoon the honey syrup evenly over the apples.
  14. Bake for 45-55 minutes, or until the apples are tender when pierced with a knife, basting 3-4 times during baking.
  15. Let cool for 20 minutes before serving.
  16. For an extra touch, serve with a dollop of crème fraîche, thick Greek yogurt, or sour cream and a spoonful of the pan juices.
