Itsa Meatball Recipe

Inspired by Carol Simontacchi's "Your Fat Is Not Your Fault," this recipe creates incredibly juicy and flavorful meatballs. I've tweaked the herb blend in the rich tomato sauce for an even more delicious twist on a classic spaghetti dinner. Enjoy this comforting and satisfying meal, perfect for a weeknight dinner! One serving is approximately 5-6 meatballs.

How to Make Itsa Meatball

  1. Preheat oven to 350°F (175°C).
  2. In a small saucepan, heat milk over medium heat. Add rolled oats and stir. Remove from heat and let sit for 5 minutes to soften.
  3. In a large mixing bowl, combine ground beef, chopped onion, parsley, egg, Parmesan cheese, olive oil, oat mixture, and salt. Gently mix until just combined.
  4. Roll the meatball mixture into 1-inch meatballs. Don't overwork the meat.
  5. Place meatballs on a baking sheet and bake for 10 minutes, or until lightly browned.
  6. While the meatballs bake, prepare the sauce. In a medium saucepan, combine tomato sauce, minced garlic, oregano, basil, and salt. Bring to a simmer over medium-low heat.
  7. Add the baked meatballs to the simmering sauce. Reduce heat to low, cover, and simmer for 45 minutes, or until the meatballs are cooked through and the sauce has thickened. Stir occasionally.
  8. Meanwhile, cook pasta according to package directions.
  9. Serve the meatballs and sauce over your cooked pasta. Garnish with extra parsley if desired.
