  • Hard Boiled Eggs
  • 1/4 cup finely chopped red onion
  • 1/4 cup Miracle Whip
  • Prepared Mustard
  • Salt And Pepper
  • Paprika

How to Make Jude S Deviled Eggs

  1. Place eggs in a saucepan and cover with cold water. Bring to a rolling boil, then remove from heat and let sit, covered, for 10 minutes.
  2. Drain hot water and run cold water over the eggs until cool enough to handle.
  3. Gently tap eggs all over to create cracks, then peel under cold running water.
  4. Cut eggs in half lengthwise and carefully remove yolks to a medium bowl.
  5. Add the red onion, Miracle Whip, and Dijon mustard to the bowl with the yolks.
  6. Mash yolks with a fork until smooth.
  7. Season generously with salt and pepper to taste. Adjust seasonings as needed.
  8. Transfer the yolk mixture to a piping bag (or a zip-top bag with a corner snipped off) and pipe or spoon the mixture back into the egg whites.
