How to Make Just Right Easy Cheese Cake

  1. Preheat oven to 350°F (175°C). Grease and flour a 10-inch springform pan.
  2. Make the crust: In a food processor, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Pulse until well combined.
  3. Press the crumb mixture into the bottom of the prepared springform pan.
  4. Wipe the food processor bowl and blade clean.
  5. Make the filling: Add softened cream cheese and sugar to the food processor. Process until smooth and creamy.
  6. Add eggs one at a time, processing until just combined after each addition.
  7. Stir in vanilla extract (and optional lemon juice).
  8. Pour the filling over the crust.
  9. Place the springform pan in a larger baking pan. Pour enough hot water into the larger pan to come halfway up the sides of the springform pan (water bath).
  10. Bake for 50-60 minutes, or until the edges are set but the center still jiggles slightly.
  11. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  12. Remove from oven and let cool completely on a wire rack.
  13. Refrigerate for at least 3-4 hours, or preferably overnight, before serving.
  14. Top with fresh berries or your favorite topping before serving.
