How to Make Kielbasa Bean Slow Cooker Soup

  1. Brown 1 lb kielbasa sausage in a large skillet over medium heat. Remove from skillet and set aside. Leave rendered fat in the skillet.
  2. Add 1 medium chopped onion and 2 cloves minced garlic to the skillet. Cook until softened, about 5 minutes.
  3. In a 5-6 quart slow cooker, combine the cooked kielbasa, sautéed onion and garlic, 1 (15-ounce) can of diced tomatoes (undrained), 1 (15-ounce) can of kidney beans (rinsed and drained), 1 (15-ounce) can of pinto beans (rinsed and drained), 4 cups of beef broth, 1 teaspoon dried oregano, 1/2 teaspoon dried thyme, and salt and pepper to taste.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until beans are tender.
  5. Before serving, stir in 1/4 cup chopped fresh parsley (optional). Serve hot with a crusty bread for dipping.
