How to Make Leave It Alone Tabbouleh

  1. Rinse 1 cup of bulgur wheat and soak in 1 1/2 cups of cold water for 30 minutes. Drain thoroughly in a fine-mesh sieve, pressing out excess water.
  2. Finely chop 1 large cucumber and 1 pint of cherry or grape tomatoes. Add them to the drained bulgur wheat.
  3. Gently mix in 1/4 cup of finely chopped fresh parsley, 2 tablespoons of finely chopped fresh mint, and the juice of 1/2 a lemon.
  4. Drizzle 1/4 cup of extra virgin olive oil over the salad and season generously with salt and freshly ground black pepper to taste.
  5. Let the salad stand at room temperature for at least 30 minutes, or preferably longer (up to 4 hours in the refrigerator) to allow the flavors to develop fully. Serve chilled or at room temperature.
