How to Make Lettuce Tower
- Bring the chicken or vegetable bouillon to a boil in a saucepan.
- Pour the boiling bouillon over the couscous in a heatproof bowl. Stir to combine.
- Cover the bowl and let it stand for 1-2 minutes, or microwave on high for 1 minute.
- Keep the couscous covered for 5 minutes, then fluff with a fork and let cool.
- While the couscous cools, prepare the vegetables: Remove seeds from the cucumber and bell pepper and julienne them.
- Reserve 1/4 of the julienned cucumber and pepper; set aside.
- Gently mix the remaining cucumber and pepper with the cooled couscous.
- In a small bowl, whisk together the olive oil and red wine vinegar.
- Add the oil and vinegar mixture to the couscous and stir to combine.
- In a small skillet, sauté the minced onion in 1 tablespoon of vegetable oil until golden brown. Let cool.
- Peel, pit, and thinly slice the avocado. Sprinkle with lemon juice to prevent browning.
- Gently mix together the crab meat, reserved cucumber and pepper, browned onion, mayonnaise, and black pepper to taste.
- Add salt to taste.
- In a separate bowl, toss the torn lettuce with a light dressing of red wine vinegar and olive oil.
- To assemble: Cut out both ends of a clean, empty can (about 8 oz size).
- Place the bottomless can on a serving plate.
- Begin layering: First, place a layer of couscous in the can, followed by a layer of avocado slices, and then the crab mixture.
- Press each layer firmly with a spoon to create a compact tower.
- Carefully remove the can.
- Garnish the lettuce tower with larger, attractive lettuce leaves.
- Serve immediately and enjoy!
