How to Make Lettuce Tower

  1. Bring the chicken or vegetable bouillon to a boil in a saucepan.
  2. Pour the boiling bouillon over the couscous in a heatproof bowl. Stir to combine.
  3. Cover the bowl and let it stand for 1-2 minutes, or microwave on high for 1 minute.
  4. Keep the couscous covered for 5 minutes, then fluff with a fork and let cool.
  5. While the couscous cools, prepare the vegetables: Remove seeds from the cucumber and bell pepper and julienne them.
  6. Reserve 1/4 of the julienned cucumber and pepper; set aside.
  7. Gently mix the remaining cucumber and pepper with the cooled couscous.
  8. In a small bowl, whisk together the olive oil and red wine vinegar.
  9. Add the oil and vinegar mixture to the couscous and stir to combine.
  10. In a small skillet, sauté the minced onion in 1 tablespoon of vegetable oil until golden brown. Let cool.
  11. Peel, pit, and thinly slice the avocado. Sprinkle with lemon juice to prevent browning.
  12. Gently mix together the crab meat, reserved cucumber and pepper, browned onion, mayonnaise, and black pepper to taste.

  19. Carefully remove the can.
