- 1 cup granulated sugar

How to Make Maple Sponge Toffee
- Line an 8x8 inch metal baking pan with parchment paper, leaving an overhang on two sides to lift the toffee out later.
- In a large, heavy-bottomed saucepan, combine 1 cup granulated sugar, ½ cup maple syrup, and ¼ cup water. Stir gently to combine.
- Cook over medium heat, without stirring, until the mixture reaches 150°C (302°F) on a candy thermometer. This will take approximately 10-15 minutes.
- Carefully remove the pan from the heat. Immediately whisk in 1 teaspoon of baking soda. The mixture will foam up dramatically – be prepared!
- Quickly pour the foamy mixture into the prepared pan and spread evenly.
- Let the toffee cool completely and harden at room temperature for at least 2-3 hours, or preferably overnight.
- Once completely cool, lift the toffee out of the pan using the parchment paper overhang. Break into pieces and enjoy!
