How to Make Maple Sponge Toffee

  1. Line an 8x8 inch metal baking pan with parchment paper, leaving an overhang on two sides to lift the toffee out later.
  2. In a large, heavy-bottomed saucepan, combine 1 cup granulated sugar, ½ cup maple syrup, and ¼ cup water. Stir gently to combine.
  3. Cook over medium heat, without stirring, until the mixture reaches 150°C (302°F) on a candy thermometer. This will take approximately 10-15 minutes.
  4. Carefully remove the pan from the heat. Immediately whisk in 1 teaspoon of baking soda. The mixture will foam up dramatically – be prepared!
  5. Quickly pour the foamy mixture into the prepared pan and spread evenly.
  6. Let the toffee cool completely and harden at room temperature for at least 2-3 hours, or preferably overnight.
  7. Once completely cool, lift the toffee out of the pan using the parchment paper overhang. Break into pieces and enjoy!
