How to Make Mexican Lasagna

  1. Preheat oven to 350°F (175°C).
  2. Brown the ground beef (or turkey) in a large skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  3. Return the meat to the skillet. Add the chopped onion and bell pepper. Cook until softened, about 5-7 minutes, stirring occasionally.
  4. Stir in the salsa, corn, chili powder, cumin, garlic powder, salt, and pepper. Mix well and simmer for 5 minutes.
  5. In a 9x13 inch baking pan, layer 1/3 of the meat mixture, then half of the tortillas, and half of the cottage cheese.
  6. Repeat layers: another 1/3 of the meat mixture, the remaining tortillas, and the remaining cottage cheese.
  7. Top with the final 1/3 of the meat sauce, shredded cheddar cheese, and sliced black olives (if using).
  8. Bake for 30-35 minutes, or until heated through and the cheese is melted and bubbly.
